Fall is soup weather in our house. I love making soups because 1. it usually makes a lot which means leftovers for lunch and 2. I pack the soup full of vegetables!!
My favorite soup to make, and a favorite in our house, is Minestrone soup. Italian flavors, veggies and pasta make it so yummy. A great dinner for a cool Fall day. Serve it with a crusty bread and you’ve got a great meal.
The recipe is below, but it’s an easy 1 pot meal that simmers on the cooktop. I use Walmart private label brands which produce a delicious soup while saving money! Minestrone Soup
Ingredients
- 1 tbsp. avocado/olive oil
- 1 small onion diced
- 2 large carrots diced
- 4-6 cloves garlic minced
- 5 oz. fresh green beans trimed, cut into pieces
- 2 14.5 oz. cans diced fire roasted tomatoes with juices
- 1 15 oz. can tomato sauce
- 1 15 oz. can kidney beans rinsed & drained
- salt, pepper, Italian seasoning to taste
- 6 cups low sodium chicken broth
- 1.5 cups small pasta uncooked
- 2 zucchini quartered
- 2 cups water as needed
- Parmesan cheese
Instructions
- Heat oil in pan. Add onion & carrots. Cook 5-7 min. or until softened. Add garlic & cook 30 seconds.
- Add remaining ingredients through the chicken broth. Bring to a boil, then reduce and simmer 30-45 min.
- Add pasta and cook.
- Add quartered zucchini.
- Add additional water if needed.
- Serve with Parmesan cheese.
