Ingredients
  

  • 1 tbsp. avocado/olive oil
  • 1 small onion diced
  • 2 large carrots diced
  • 4-6 cloves garlic minced
  • 5 oz. fresh green beans trimed, cut into pieces
  • 2 14.5 oz. cans diced fire roasted tomatoes with juices
  • 1 15 oz. can tomato sauce
  • 1 15 oz. can kidney beans rinsed & drained
  • salt, pepper, Italian seasoning to taste
  • 6 cups low sodium chicken broth
  • 1.5 cups small pasta uncooked
  • 2 zucchini quartered
  • 2 cups water as needed
  • Parmesan cheese

Instructions
 

  • Heat oil in pan. Add onion & carrots. Cook 5-7 min. or until softened. Add garlic & cook 30 seconds.
  • Add remaining ingredients through the chicken broth. Bring to a boil, then reduce and simmer 30-45 min.
  • Add pasta and cook.
  • Add quartered zucchini.
  • Add additional water if needed.
  • Serve with Parmesan cheese.
