Minestrone Soup
The best Italian Minestrone Soup. A one-pot dinner full of veggies, pasta and Italian seasonings.

- 1 tbsp. avocado/olive oil
- 1 small onion diced
- 2 large carrots diced
- 4-6 cloves garlic minced
- 5 oz. fresh green beans trimed, cut into pieces
- 2 14.5 oz. cans diced fire roasted tomatoes with juices
- 1 15 oz. can tomato sauce
- 1 15 oz. can kidney beans rinsed & drained
- salt, pepper, Italian seasoning to taste
- 6 cups low sodium chicken broth
- 1.5 cups small pasta uncooked
- 2 zucchini quartered
- 2 cups water as needed
- Parmesan cheese
Heat oil in pan. Add onion & carrots. Cook 5-7 min. or until softened. Add garlic & cook 30 seconds.
Add remaining ingredients through the chicken broth. Bring to a boil, then reduce and simmer 30-45 min.
Add pasta and cook.
Add quartered zucchini.
Add additional water if needed.
Serve with Parmesan cheese.
